How to Get Froth in Filter Coffee at Home

To get froth in filter coffee, mix a strong decoction with hot, fresh milk and pour the kaapi back and forth between a steel davara and tumbler from a height. The pouring brings in air, and the air becomes the froth on top. It takes a minute and a little practice.

If your cup at home stays flat while the one at a darshini comes with a thick foam, the difference is usually in the heat of the milk, the strength of the decoction and the pour. Here is how to get froth in filter coffee, step by step. Full-cream, frothy filter kaapi is what many call degree coffee.

What you need

  • A strong decoction (see our guide to making filter coffee at home)
  • Fresh milk, boiled and kept hot
  • A steel davara and tumbler
  • Sugar, if you take it

For the decoction, use a filter coffee powder made for the steel filter (like Kaapiswada Swadamalnad: our 80:20 blend made with single-estate Arabica from our own family estate in Chikmagalur).

How to get froth in filter coffee, step by step

  1. Put a few spoons of strong decoction and sugar into the tumbler.
  2. Bring the milk to a boil and pour it in, leaving a little room at the top.
  3. Pour the kaapi from the tumbler into the davara, lifting your hand as high as is comfortable.
  4. Pour it back into the tumbler, again from a height.
  5. Repeat four or five times. A foam will build up on top.
  6. Serve it straight away while the froth is still there.

Why the froth sometimes does not come

  • The milk is not hot enough. Warm milk gives a flat cup. Keep it near boiling.
  • The decoction is thin. A weak decoction gives little body to hold the foam. See how to fix a weak filter coffee decoction.
  • The pour is too short. Raise your hand higher, slowly, so the stream carries air.
  • The milk is very thin. Full-cream milk generally holds foam better than thin milk. Our guide to the best milk for filter coffee goes into this.

Does the type of coffee matter?

A blend with chicory gives a darker, heavier decoction, which many people find holds the froth well. A 100% Arabica powder (like Kaapiswada Pureswada: 100% single-estate Arabica from our own family estate, no chicory) gives a lighter, more aromatic cup that also froths well when the decoction is strong. You can look at both on our products page.

Questions people ask

Do I need a davara and tumbler to get froth? They make it easy, because the wide mouth helps the stream carry air. Two steel tumblers or two mugs also work.

Can I get froth without pouring from a height? A little, by whisking with a small hand frother. The classic pour gives the thicker, traditional froth.

Is the froth from the coffee or the milk? Mostly from the milk, helped by a strong decoction. The pour adds the air.

How long does the froth last? Not long. Serve right after pouring, because the foam settles within a few minutes.
